Why this coffee?

This is a lovely example of what an archetypical washed coffee from Huila should taste like. This one is executed thanks to many years of knowledge and progression in processing techniques to accentuate a little bit more the fruit character of this coffee and a little bit less the herbal characteristics. Essentially it is a fairly basic aromatic profile, fruity (orange, berries) and clean as a whistle with a bright fruity acidity. A very clean cup (free of flavour defects) and great flavour balance (homogenous cherry maturity at time of processing) that proudly flies the flag of what makes coffees from Huila in Colombia so delicious and special.

This lot is made up exclusively of the pacamara arabica cultivar. A cross between the dwarf variety pacas and the large seed variety maragogipe.

STEP 2. OXIDATION IN CHERRY FOR 24 HOURS

STEP 3. FERMENTATION IN GRAINPRO BAG FOR 90 HOURS

STEP 4. FERMENTED FOR ANOTHER 24 HOURS

STEP 5. WASHES ONCE GENTLY WITH LITTLE WATER

STEP 6. DRYING IN A CANOPY OR NATURALLY IN THE SUN, DEPENDING ON THE WEATHER FOR APPROXIMATELY 10-20 DAYS UNTIL REACHING A HUMIDITY OF 11%

Coffee lot story

The following information is supplied by the exporter and importer into France, CATA.

The main objective of the different Blends produced at Cata Export is to make known the coffee of small producers who, for different reasons, have not yet received support to market their coffee.

For this Pacamara, different producers from the municipality of Salado Blanco in the department of Huila participated; in plots with an area of ​​1.5 hectares and perhaps precarious conditions, they are provided with comprehensive advice on various topics: Soils, clean agriculture, maintenance of mills, tanks, water treatment, bag fermentation, physical and sensory advice, ensuring so that the coffee that is produced is in accordance with the processing standards, once it is verified that the coffee is suitable, it goes to the thresher.

In this way, a replicable fermentation protocol and a post-harvest protocol were created with the same variety, taking into account that not everyone knows the subject of special coffees, constant reinforcement and control of these techniques is intended so that there is an evolution after harvest that allows later to obtain a luxury coffee.

This Blend Pacamara is a coffee that can be used for espresso or for filter brewing, This profile is simple, nothing pretentious, but on the contrary, very representative of the humility and simplicity that characterizes a community as hard-working and friendly as the one we find in Salado Blanco.

Brewing

Simply empty packet and add 250-300ml of water.

Because the coffee is already extracted, you can brew with any temperature water you desire. Hot, cold or a ready to enjoy 65°c.
